These three interlinked advanced seminars built on the series Cider Making – Principles & Practice and aim to provide: A broad appreciation of the underlying science and technology of cider making; Knowledge and understanding of hygiene and microbiological control; and a detailed insight into the techniques and application of sensory analysis and laboratory quality control. Sessions include lectures, workshops, practical project work and cider tasting. Individual seminars are available separately if required

One of the world’s leading experts in cider production – in association with the North West Cider Society - this class aims to provide you with a thorough grounding in the main principles and practices of orcharding and cider and perry making; a wealth of knowledge, insight and technical know-how, drawn from many years of practical experience, together with the skills, knowledge and understanding necessary for the production of quality cider and perry. The course is suitable for beginners, new businesses and existing producers (large & small-scale) alike.

The classes are led by Peter Mitchell, an internationally recognised expert in cider making and tasting, a UK and USA competition judge, a professional trainer and an award winning producer in his own right. Peter runs his own specialist cider training and consultancy business - Mitchell F&D Limited, which includes the highly regarded Cider Academy. The company also operates expert-led cider tours to England. Peter will provide delegates with a wealth of knowledge and insight drawn from over 20 years of practical experience.
